Date and Walnut Pie with Star Anise- Mace Crust

  • Crust: piepic.jpg

            1 ¼ c flour

            ¾ t sugar

            ½ t salt

            ¼ c butter

            ¼ c cold shortening

            2 ½ or more T cold water

1 generous pinch of ground star anise

            1 dash mace

Preheat oven to 425.

Mix the first three ingredients and spices in a large mixing bowl.  Cut in butter and shortening until mixture looks like a coarse meal but some larger pieces of butter are still visible.  Add the water, mixing until the dough forms a ball.  If more water is required to do so, add more by the tablespoon.  Roll dough out on a lightly floured surface, and then place in a nine inch pie crust.  Refrigerate while making the filling.

Filling:

            3 eggs

            ¾ c sugar

1/2 c dark corn syrup (or replace one tablespoon of corn syrup with molasses, depending on your preference)

            ½ c light corn syrup

            ½ c dates, coarsely chopped

            2/3 c walnuts, chopped

Whisk first four ingredients in a large mixing bowl until mixture is homogenous.  Fold in dates and walnuts, and then pour mixture into prepared crust.  Bake in preheated oven for ten minutes, then reduce oven temperature to 350º and continue to bake for another thirty-five minutes.
