By Popular-ish Demand, the Pear Cake Recipe:

I was very tired and didn’t measure anything, so I hope these estimates are useful.  If the cake doesn’t come out, sorry.  But that’s not really my problem.  Happy baking!

Pear-oat -chocolate chip cake

  • 5-ish bosc pears, peeled and diced, sautéed until soft
  • 1.5 c flour (?)
  • 1.5 t baking powder
  • ½ t salt
  • ½ t cinnamon
  • 1 t ginger
  • 4 oz butter
  • ¾-1 c sugar (your guess is as good as mine; I kind of forget)
  • 2 egg whites+1 egg
  • 2/3 c milk (another sketchy quantity; use your best judgment)
  • 1 c oatmeal cooked in about 1 c water until porridge-y
  • Enough chocolate chips.
  1. You could mix the dry ingredients together first, I guess.
  2. Cream together the butter and sugar and then add the egg and whites.  You could use two eggs, but I just had extra whites.  Don’t use 3 egg whites.
  3. Beat in 1/3 of the dry ingredients.
  4. Beat in the oatmeal.
  5. Beat in another 1/3 of dry
  6. Beat in milk
  7. Finish with dry.  If the batter is too anything at this point, fix it.
  8. Fold the pears into the batter, then spread half in a greased 8” cake pan
  9. Cover with a layer of chocolate chips

10. Cover with rest of batter

11.  Sprinkle with sugar and/or oats or whatever you want.  Go crazy.

12. Bake at 350 until done.  Maybe like 40 minutes.  A machete inserted into the middle of the cake would come out partially clean, but the oatmeal keeps the cake pretty fucking moist.  Don’t be scared if your machete has a little batter on it.

13. Eat the cake.
